Muffin Surprise
Preheat oven to 400 degrees.
Stir together in bowl:
2 cups flour
¼ cup sugar
3 tsps. baking powder
1 tsp. salt
Make a “well” in the center of this mixture.
Beat slightly with a fork in another bowl:
1 egg
Stir in:
1 cup milk
¼ cup vegetable oil
Pour egg mixture all at once into “well” in flour mixture. Stir just until flour is moistened. Batter will be lumpy. Do not over mix.
Fill muffin cups (greased) half full with batter. Drop a tsp. of jelly or jam in center of batter. Add more batter to fill 2/3s full. Bake 20 to 25 minutes.
Discovering the jelly inside the baked muffins is the surprise.
Macaroni and Cheese
Prepare a package of macaroni, following the directions. Do not overcook.
Make the following white sauce:
2 T. butter
2 T. flour
1 cup milk
¼ tsp. salt
Melt butter in a saucepan over low heat. Blend in flour and salt. Add milk all at once. Cook quickly, stirring constantly till mixture thickens and bubbles. Add enough Velveeta or American cheese to provide good cheesy taste.
Layer drained macaroni noodles in pan. Pour on layer of cheese sauce, salt and pepper. Repeat to fill pan.
Bake in 350 degrees oven for approximately 30 minutes or till lightly browned on top. Serve warm.
Moonballs
1 cup nonfat dry milk
1/2 cup homey
1/2 cup peanut butter
1/2 cup granola type cereal, crushed
Mix dry milk, honey, and peanut butter until well blended. Chill. Form into balls the size of walnuts. Roll in the crushed cereal. Very nutritious.

Nachos
Provide large nacho chips. Children put a spoonful of refried beans and/or grated cheese on nachos. Heat in 350 degrees oven 5 to 10 minutes.
Cheese Dip:
1½ lbs. Velveeta cheese
½ can cream soup (Chicken, celery, mushroom)
Picante sauce to taste
Heat Velveeta cheese and soup till cheese is melted and mixture is thick. Add picante sauce to season according to taste. Serve with nachos.

1½ tsp. salt
1 beaten egg
1½ cups milk
2 T. salad oil
¾ cup chopped walnuts or pecans
Sift together dry ingredients. Combine egg, milk, and salad oil; add to dry ingredients, beating well. Stir in nuts.
Turn into greased 9 x 5 x 3 inch loaf pan. Bake in 350 degrees oven about 1 to 1½ hours or till done. Remove from pan and cool on rack.

1 cup margarine and shortening, mixed
2 eggs
2 tsp. ginger
2 tsp. cinnamon
2 T. vinegar
2 tsp. baking soda
½ tsp. salt
5 cups flour
Cream shortening mixture and sugar. Add eggs and molasses. Mix well. Add vinegar and soda. Mix well. Stir in flour, salt, cinnamon, and ginger. Chill dough. Make small balls from dough. Flatten with a glass dipped in sugar. Bake at 375 degrees for 8 to 10 minutes.

2 eggs, beaten
½ cup coconut
½ cup pecans
1 tsp. vanilla
1 tsp. baking soda
½ tsp. salt
1½ cups flour
3 cups Minute oats
½ cup chocolate chips
Cream shortening and sugars together, mixing well. Add beaten eggs and vanilla. Sift together flour, soda, and salt Stir into mixture. Add oats, coconut, pecans, and chocolate chips and mix well. Drop in small balls on greased cookie sheet. Bake at 375 degrees for 10 to 15 minutes. Make approximately 5 dozen cookies.
